Root Cause: This is the expected behaviour of the Online backup (uxbck UNI command)

Resolution

As indicated on the Administration documentation of Dollar Universe 6:

4.2.3.1 On line back-up
This feature allows Dollar Universe data files to be backed up during normal service without the need
to stop and start Dollar Universe, its Engines or I/O servers.

That means that only the *.dta files will be backuped by the command uxbck uni.
If you want a full backup, then you need to launch the offline backup:

4.2.3.2 Offline Backup
The unibackup command (program on OS/400) allows the user to backup all or part of the Dollar
Universe Company. The log files and are not backed up.
