This is expected behavior and the issue will resolve itself automatically once 24 hours have passed since the configuration change. At that point, the "Last Day" window will consist entirely of 5-minute interval data.
To view performance data before the 24-hour period has elapsed, use the advanced performance view with a custom interval (available 1 hour after the change):
vSphere Client > Object (e.g., ESXi host) > Monitor > Performance > Advanced > Chart Options > Custom Interval.
