When you have multiple environments that are siloed, and you are preparing to do upgrades, it is important to verify that your appliances have Anti-Affinity rules if there are requirements that only certain hosts meet to run the appliances. If you upgrade your ESX hosts that are running your Edge Nodes, and your anti-affinity rules are not active, the Edge nodes could be moved to a host that does not have all the proper connections for the Edge to function correctly, causing an outage.

Causes could be user error, or incorrect setup of the anti affinity rules. Some types of automation may disable anti affinity rules for certain types of maintenance, but if those Appliances MUST reside on a specific host for physical reasons, you must be sure your anti affinity rules are in place and active.
In Vcenter, check the anti-affinity rules that are assigned to your appliance vms, and verify if they are enabled or not.
