Log Metrics / Alarms only allow usage of Hostname in Log Field, not minimally viable for services. Need Clarify Entity Mapping in docs as well

Issue/Introduction

Need to be able to map any indexed field to any attribute for the target Entity.

For example, Log Field [instanceName] should be able to mapped to Type(<Policy Server>) + Attribute(<InstanceName>)
