When using multi-tenancy, can CA Service Desk Manager (CA SDM) be configured to send out email notifications using a separate "from address" for each tenant?

Answer
No, at this time CA SDM does not have the capability to configure each tenant to use a separate "from address".
CA SDM only allows the configuration of a single "from address", for which all CA SDM email notifications will use across all tenants.
To configure the "from address", log into CA Service Desk Manager with an Administrator user and navigate to Administration tab->Options Manager->Email

From here, you can set the "mail_from_address" option, along with all of the other CA SDM email related options. All outgoing notifications will use this same "from address" specified in 'mail_from_address' option.
NOTE: You must recycle the CA Service Desk Manager service to invoke this change as it is set during the CA SDM startup process.
