When creating a case with technical support, one of the fields asks for the version number. Where can I find this information?

The ticketing system was tailored to the needs of Broadcom/Symantec products overall, which usually do have versions. Email security.cloud does not as it is a SaaS product, so you can just choose any version number there that you want to. It doesn't affect on how the case is handled for Email Security.Cloud.
