Does Endevor work with Extended Addressability Volumes (EAV) devices?

Endevor does support extended addressability volumes and should find no problem to handle datasets residing in the cylinder-managed part of these devices.
Endevor 12.0 and earlier don't support EAS datasets.

If you are running LServ to manage Endevor files, you may need to apply PTFs.
